Las Vegas runs late, looks shiny, and does not need us to pretend everything there has to be overcomplicated. Shrimp cocktail is an old-school Vegas classic, and it works beautifully as a fast, cold, race-night dish.

Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 lemon, halved
- 1 teaspoon salt
- Ice, for chilling
- 1/2 cup ketchup
- 2 tablespoons prepared horseradish
- 1 teaspoon Worcestershire sauce
- 1 teaspoon lemon juice
- Hot sauce, to taste
Method
- Bring a pot of water to a boil with one lemon half and the salt.
- Add the shrimp and poach for 2 to 3 minutes until just cooked.
- Transfer immediately to ice water to chill.
- Mix the ketchup, horseradish, Worcestershire, lemon juice, and hot sauce for the cocktail sauce.
- Serve the chilled shrimp with the sauce and lemon wedges.

- Wine: Brut sparkling wine.
- Local pairing: Sparkling lime water.
Notes
- Do not overcook the shrimp. This recipe is all about staying clean and snappy.
- A martini glass is optional, but the Vegas mood appreciates it.
