Method
- Soak the cut potatoes in cold water for 20 minutes, then dry well.
- Fry the chips at 325 F for 5 to 6 minutes. Remove and rest.
- Mix the flour, baking powder, salt, and cold beer or sparkling water into a smooth batter.
- Dust the fish lightly with flour, then dip into the batter.
- Fry the fish at 375 F for 5 to 7 minutes until crisp and golden.
- Return the chips to the oil and fry until deeply golden.
- Serve with malt vinegar and tartar sauce.
