Ingredients
- 2 tablespoons oil or ghee
- 1 whole chicken, cut into pieces, or 2 pounds bone-in chicken
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon ground coriander
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 2 cups basmati rice
- 3 cups chicken stock
- 1 tomato, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
- Heat the oil or ghee in a heavy pot and brown the chicken lightly.
- Add the onion and cook until softened.
- Stir in the garlic, ginger, coriander, cumin, turmeric, cinnamon, and cardamom.
- Add the tomato, salt, and pepper and cook for 2 minutes.
- Stir in the rice and coat it in the spices.
- Pour in the stock, bring to a simmer, cover, and cook on low for 20 minutes.
- Turn off the heat and let it rest for 10 minutes before fluffing.
