Sao Paulo Mortadella Sandwich

Ingredients

  • 2 crusty sandwich rolls
  • 12 to 16 thin slices mortadella
  • 4 slices provolone or mozzarella
  • 1 tablespoon butter
  • Pickled peppers or mustard, optional

Method

  1. Split the rolls.
  2. Heat a large skillet over medium heat and melt the butter.
  3. Add the mortadella in loose folds and warm it for 1 to 2 minutes.
  4. Top with the cheese and let it melt.
  5. Pile the mortadella and cheese into the rolls.
  6. Add pickled peppers or mustard if you like and serve immediately.

  • Wine: Brazilian sparkling rose.
  • Local pairing: Guarana.

Notes

  • Do not flatten the mortadella too much. The abundance is part of the point.
  • A little heat from peppers helps cut the richness.
