Sao Paulo Mortadella Sandwich
The famous mortadella sandwich from Sao Paulo’s Mercado Municipal is big, joyful, and absolutely not interested in restraint. That makes it a very strong fit for a sprint-heavy part of the season when everyone is running on emotion and caffeine.

- 12 to 16 thin slices mortadella
- 4 slices provolone or mozzarella
- 1 tablespoon butter
- Pickled peppers or mustard, optional
Method
- Split the rolls.
- Heat a large skillet over medium heat and melt the butter.
- Add the mortadella in loose folds and warm it for 1 to 2 minutes.
- Top with the cheese and let it melt.
- Pile the mortadella and cheese into the rolls.
- Add pickled peppers or mustard if you like and serve immediately.

Notes

- A little heat from peppers helps cut the richness.
